Need a new way to serve Zucchini tonight? Try this Parmesan Herb to mix things up! It was a bit hit around our house!
Crusty Parmesan Herb Zucchini
- 4 medium, fresh zucchini, sliced in half
- 1/2 cup fresh Parmesan cheese, grated
- 1-2 tablespoons fresh rosemary & thyme, minced (I didn’t have any fresh time so I substituted with a bit of dried thyme)
- smidge of olive oil
- salt & pepper to taste
1.) Preheat Oven to 350 degree’s
2.) Cover a cookie sheet with foil
3.) Lightly brush both sides of the zucchini with olive oil and place on tray
4.) Mix Parmesan , rosemary and thyme together and sprinkle on zucchini
5.) Bake for 15 minutes and place under the broiler for the last 3-5 minutes until cheese is crispy and brown.
