Cowboy chow that is! Today I thought I would share a crockpot recipe that has become a pretty regular at our house. (It’s growing on the munchkins). One of the great things about this recipe is that you can adapt it SO many ways. If you want it spicier double the salsa and BBQ sauce. Meatier add more chicken!
Shall we begin?
Here are the ingredients:
- 2-4 frozen chicken breasts
- 1 cup BBQ sauce
- 1 cup salsa
- 2 cans corn
- 3 cans black beans
- 3 cans pork and beans
* I cook this up in a 6 quart crockpot and it makes a TON!
Pour all ingredients in crock pot.
After cooking on high 4-5 hours or on Low for 6-8 hours pull the chicken out and shred it. Then add back into crockpot.
Then you are ready to eat!
(disclaimer: this particular batch has 4 chicken breasts (and was a hit with the husband) because they were frozen together and I couldn’t get them apart. Normally though I prefer it with only 2)
Serve with Frito’s, corn chips, rice or cornbread. Could add sour cream or a little cheddar cheese sprinkled on top too.
