Grilled Potatoe Planks

Today I am featuring another recipe from this book:


Grilled potato planks.  These were easy to whip up and yummy to eat!  Unfortunately I forgot to take a picture of the finished product so you are stuck with the “before” cooking picture!

Grilled Potato Planks

  • 1 1/2 pound (@ 3 large) unpeeled baking potatoes cut into 1/2 inch thick slices
  • 3 TBS olive oil
  • 2 tps finely chopped fresh rosemary
  • 1 garlic clove minced (I omitted this)
  • 1/2 tsp salt

Preheat grill to medium high.  Combine oil rosemary, garlic and salt in dish.  Dip potato slices and turn until well- coated.  Grill potatoes for about 8 minutes.  Turn and continue grilling 10 minutes longer or until cooked.

Serve this with Peach BBQ chicken some fresh fruit and veggies and you have a wonderful meal!
