This is our latest family favorite for all those extra peppers we seem to have! One batch was enough for dinner and enough meat sauce to freeze for next time too!

Ingredients for Meat Sauce:
- a dash of garlic salt
- 2 cups finely chopped celery
- 3 cups grated carrots
- 5 Lbs. lean ground beef
- 2 tsp. salt
- 3 TBS Worcestershire sauce
- 1 – 28 oz bottle of ketchup
- 1 can tomato soup
I haven’t tried this but For a Spicier version:
- 4 medium onions, sliced
- omit garlic salt and use 3 garlic cloves finely chopped, or 1/2 tps dried minced garlic
- Omit tomato soup use ~ 6 drops hot pepper sauce
1.) Brown hamburger
2.) While hamburger is browning cut celery and carrots.
3.) Saute celery and carrots with a little vegetable spray
4.) In a large pot mix all ingredients (except the peppers!) together
5.) Simmer 20 min.
Use immediately or freeze into 5- 1 pint containers
- 8 Green Peppers
- 1 pint meat sauce
- 2 cups cooked rice *
- cheddar cheese grated (@ 1/2 cup)
* if you want to add more rice go for it!
1.) Preheat Oven to 350 degree’s
2.) Simmer meat sauce and cooked rice for about 10 min. until heated through
6.) While meat is simmering fill a pot of water and bring to a boil, cut out top of peppers and gut them
7.) Boil Peppers for 7 min.
8.) Take out of water and place in 9×13 pan (or whatever size you are making)
9.) Fill Pepper insides with Meat Mixture
10.) Top with a little grated Cheese
11.) Bake 350 degree’s for about 20 min. (If you start with warm meat sauce!)
